- 2 boneless chicken breasts
- Salt and pepper to taste
- 1 tablespoon olive oil
- 1/3 cup mayonnaise
- 2 tablespoons sweet chili sauce
- 1 tablespoon sriracha
- 4 cups mixed greens
- 1 large carrot, julienned
- 1 cucumber, sliced
- 2 green onions, chopped
Instructions
- In a small bowl, whisk together mayonnaise, sweet chili sauce, and sriracha until smooth. Set aside.
- Season chicken breasts with salt and pepper, then cut into bite-sized pieces.
- Heat olive oil in a skillet over medium-high heat. Add chicken pieces and cook for 6-8 minutes until golden brown and cooked through.
- While the chicken cooks, prepare the vegetables: wash mixed greens, julienne the carrot, and slice the cucumber.
- Divide mixed greens between two bowls and top with carrots, cucumbers, and cooked chicken.
- Drizzle with bang bang sauce and garnish with green onions. Serve immediately.
