  • 1/2 tsp cumin
  • 1 1/2 tsp salt
  • 1 tsp cracked black pepper
  • 15 oz tomato sauce
  • 1/3 cup pure maple syrup
  • 3 tbsp apple cider vinegar
  • 1 tbsp lime juice
  • 1 1/2 tbsp avocado oil
  • 4 cups red cabbage (finely shredded)
  • 2 cups carrots (grated)
  • 1 1/4 cups cucumber (diced)
  • 2 avocados (sliced)
  • 2 1/2 cups jasmine rice (cooked)
  • 1/4 cup fresh cilantro (chopped, for topping)

Instructions

  1. Prepare the spice mix by combining smoked paprika, brown sugar, garlic powder, onion powder, chili powder, cumin, salt, and black pepper in a mixing bowl.
  2. Heat avocado oil in a large skillet over medium heat. Add chicken chunks and sprinkle half of the spice mix over them. Cook until browned on all sides, about 5-7 minutes.
  3. In another bowl, mix tomato sauce, maple syrup, apple cider vinegar, lime juice, and the remaining spice mix to create the BBQ sauce.
  4. Pour the BBQ sauce over cooked chicken in the skillet and simmer for about 5 minutes to meld flavors.
  5. Assemble your bowls by starting with a base of cooked jasmine rice and topping it with BBQ chicken mixture, shredded cabbage, grated carrots, sliced avocado, and cilantro.
