- 1.25 lbs chicken breast (cut into 1-inch chunks)
- 2 tbsp smoked paprika
- 1 tbsp brown sugar
- 2 tbsp garlic powder
- 1 1/2 tbsp onion powder
- 3/4 tsp chili powder
- 1/2 tsp cumin
- 1 1/2 tsp salt
- 1 tsp cracked black pepper
- 15 oz tomato sauce
- 1/3 cup pure maple syrup
- 3 tbsp apple cider vinegar
- 1 tbsp lime juice
- 1 1/2 tbsp avocado oil
- 4 cups red cabbage (finely shredded)
- 2 cups carrots (grated)
- 1 1/4 cups cucumber (diced)
- 2 avocados (sliced)
- 2 1/2 cups jasmine rice (cooked)
- 1/4 cup fresh cilantro (chopped, for topping)
Instructions
- Prepare the spice mix by combining smoked paprika, brown sugar, garlic powder, onion powder, chili powder, cumin, salt, and black pepper in a mixing bowl.
- Heat avocado oil in a large skillet over medium heat. Add chicken chunks and sprinkle half of the spice mix over them. Cook until browned on all sides, about 5-7 minutes.
- In another bowl, mix tomato sauce, maple syrup, apple cider vinegar, lime juice, and the remaining spice mix to create the BBQ sauce.
- Pour the BBQ sauce over cooked chicken in the skillet and simmer for about 5 minutes to meld flavors.
- Assemble your bowls by starting with a base of cooked jasmine rice and topping it with BBQ chicken mixture, shredded cabbage, grated carrots, sliced avocado, and cilantro.
