- 2 lb grilled chicken breast
- 2 ears corn
- 1 large avocado (sliced)
- 5 cups romaine lettuce
- 2 cups cherry tomatoes (halved)
- 1/2 cup thinly sliced red onion
- 1/3 cup olive oil
- 1/4 cup apple vinegar
- 1/2 tsp salt
- 1/2 tsp freshly ground pepper
- 1/2 tsp dried oregano
- 1 teaspoon honey
- 1 tablespoon fresh lime juice
Instructions
- Grill chicken until fully cooked; let rest before slicing.
- Cook corn on the grill until tender; cool and cut kernels off.
- In a bowl, whisk together olive oil, apple vinegar, salt, pepper, oregano, honey, and lime juice for the dressing.
- In a large bowl, layer romaine lettuce, grilled chicken slices, corn kernels, avocado wedges, cherry tomatoes, and red onion.
- Drizzle with dressing and toss gently before serving.
