  • 1 lb rotini pasta
  • 1 lb ground beef
  • 2 cups shredded cheddar cheese
  • 1 cup diced tomatoes
  • 1/2 cup diced red onion
  • 2 cups chopped lettuce
  • 1 cup thousand island dressing
  • Salt and pepper to taste

Instructions

  1. Cook the rotini pasta according to package directions until al dente. Drain and rinse with cold water; set aside to cool.
  2. In a skillet over medium-high heat, brown the ground beef until fully cooked. Season with salt and pepper, drain excess fat, and let cool.
  3. Dice the tomatoes and red onion; chop the lettuce into bite-sized pieces.
  4. In a large mixing bowl, combine cooled pasta, ground beef, shredded cheddar cheese, diced tomatoes, and red onion. Add thousand island dressing and mix well.
  5. Just before serving, gently fold in the chopped lettuce to maintain its crispness. Chill for at least 30 minutes before serving.
