Ingredients
- 1 lb rotini pasta
- 1 lb ground beef
- 2 cups shredded cheddar cheese
- 1 cup diced tomatoes
- 1/2 cup diced red onion
- 2 cups chopped lettuce
- 1 cup thousand island dressing
- Salt and pepper to taste
Instructions
- Cook the rotini pasta according to package directions until al dente. Drain and rinse with cold water; set aside to cool.
- In a skillet over medium-high heat, brown the ground beef until fully cooked. Season with salt and pepper, drain excess fat, and let cool.
- Dice the tomatoes and red onion; chop the lettuce into bite-sized pieces.
- In a large mixing bowl, combine cooled pasta, ground beef, shredded cheddar cheese, diced tomatoes, and red onion. Add thousand island dressing and mix well.
- Just before serving, gently fold in the chopped lettuce to maintain its crispness. Chill for at least 30 minutes before serving.
