Ingredients
- 3 cups cooked shredded chicken
- 2 cups sweet corn kernels
- 4 cups chicken broth
- 1 cup heavy cream
- 1 medium onion, diced
- 3 cloves garlic, minced
- 2 tablespoons butter
- Fresh parsley, for garnish
Instructions
- In a large pot, melt the butter over medium heat. Add the diced onion and sauté until softened, about 4-5 minutes. Stir in the minced garlic and cook for another minute.
- Pour in the chicken broth and bring to a simmer. Add sweet corn and let cook for 5-7 minutes.
- Stir in shredded chicken and continue to simmer for another 10 minutes. Season with salt, pepper, and any preferred herbs.
- Reduce heat to low, gradually add heavy cream while stirring until smooth; warm through for about 3-4 minutes.
- Remove from heat, ladle into bowls, garnish with fresh parsley, and serve hot.
