Instructions
- Season chicken breasts with salt and pepper.
- Heat olive oil in a skillet over medium-high heat. Cook chicken for 6-7 minutes per side until golden brown and cooked through. Remove from heat and let rest for 5 minutes before slicing.
- In a mixing bowl, mash minced garlic with softened butter and a pinch of salt to create garlic butter.
- Spread garlic butter on both sides of each slice of bread and toast in a skillet until golden brown (about 2-3 minutes per side).
- Assemble by placing sliced chicken on one slice of toasted bread, topping with cheese and fresh herbs, then covering with the second slice.
- Return to skillet and cook for an additional 2-3 minutes per side until cheese melts and bread is crispy. Slice diagonally and serve hot.
