Instructions
- Preheat your oven to 325°F (163°C) and grease a 9-inch springform pan.
- In a mixing bowl, combine crushed graham crackers and melted butter; press into the bottom of the prepared pan.
- Beat cream cheese until smooth, then gradually add sugar, mixing well after each addition. Add eggs one at a time and blend in vanilla.
- In another bowl, mix ground cinnamon, brown sugar, and honey for the swirl.
- Pour the cream cheese filling over the crust; dollop with the cinnamon mixture and swirl gently.
- Place in a larger baking dish filled halfway with hot water and bake for 60-70 minutes until just set.
- Cool in the oven with door slightly ajar for an hour; refrigerate for at least four hours before serving.
