Ingredients
- 2 cups ripe mango (peeled and chopped)
- 1 cup full-fat coconut cream
- 2 tablespoons honey or maple syrup
- 1 tablespoon fresh lime juice
- Pinch of salt
Instructions
- Peel and chop the mangoes until you have about 2 cups of fruit.
- In a blender, combine mangoes, coconut cream, honey or maple syrup, lime juice, and salt. Blend until smooth.
- Taste and adjust sweetness if needed.
- Pour the mixture into popsicle molds, leaving a small gap at the top for expansion.
- Insert sticks if necessary and freeze for at least 6 hours or overnight until solid.
- To unmold, run warm water over the outside of the molds for a few seconds before removing popsicles.
