  • 1.5 lbs boneless, skinless chicken breasts
  • 4 cups chicken broth
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 cups carrots, sliced
  • 2 cups celery, sliced
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup fresh parsley, chopped

Instructions

  1. Prepare the ingredients by dicing the onion, mincing the garlic, and slicing the carrots and celery.
  2. Layer the chicken breasts in the bottom of the crockpot and add the diced onion, minced garlic, carrots, and celery on top.
  3. Pour in the chicken broth and sprinkle with Italian seasoning, salt, and black pepper.
  4. Cover and cook on low heat for 6 hours or until the chicken is tender.
  5. Shred the cooked chicken with two forks and return it to the pot.
  6. Stir in heavy cream and grated Parmesan until well combined.
  7. Heat through for an additional 10-15 minutes before serving.
