- 1.5 lbs boneless, skinless chicken breasts
- 4 cups chicken broth
- 1 medium onion, diced
- 3 cloves garlic, minced
- 2 cups carrots, sliced
- 2 cups celery, sliced
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup fresh parsley, chopped
Instructions
- Prepare the ingredients by dicing the onion, mincing the garlic, and slicing the carrots and celery.
- Layer the chicken breasts in the bottom of the crockpot and add the diced onion, minced garlic, carrots, and celery on top.
- Pour in the chicken broth and sprinkle with Italian seasoning, salt, and black pepper.
- Cover and cook on low heat for 6 hours or until the chicken is tender.
- Shred the cooked chicken with two forks and return it to the pot.
- Stir in heavy cream and grated Parmesan until well combined.
- Heat through for an additional 10-15 minutes before serving.
