- 1 lb cheese tortellini
- 1 lb Italian sausage (or chicken/turkey)
- 2 cups heavy cream
- 1 cup grated Parmesan cheese
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- Fresh parsley, chopped
- Salt and black pepper to taste
Instructions
- Cook the tortellini in a large pot of salted boiling water according to package directions until tender, then drain.
- In a skillet over medium-high heat, heat olive oil and add the sausage (or chicken). Cook until browned and crispy.
- Stir in minced garlic and cook for 30 seconds before adding heavy cream. Bring to a simmer and cook until slightly thickened.
- Reduce heat, stir in Parmesan cheese until melted, and season with salt and pepper.
- Toss the cooked tortellini into the sauce mixture, adding reserved pasta water if needed to reach desired consistency.
- Serve hot, garnished with fresh parsley and additional Parmesan.
