- 10 oz cleaned squid tubes (cut into rings)
- 1/2 cup all-purpose flour
- 1/2 cup cornstarch
- 1/2 teaspoon baking soda
- 1/2 cup water
- Oil for deep-frying
- 1/2 tablespoon oil (for frying scallions and chilies)
- 2 tablespoons chopped scallions
- 1 teaspoon chopped red chilies
- 1/2 teaspoon salt
- 1/2 teaspoon ground white pepper
Instructions
- Rinse the squid under cold water and cut into rings; pat dry.
- In a bowl, mix flour, cornstarch, baking soda, water, and salt until smooth.
- Heat oil in a wok or deep frying pan to 350°F (175°C).
- Fry squid rings until golden brown (about 3-4 minutes); drain on paper towels.
- Sauté scallions and chilies in oil until fragrant.
- Combine fried squid with sautéed ingredients; sprinkle with salt and white pepper before serving.
