- Chocolate sandwich cookies

Instructions
- For the crust, crush the chocolate sandwich cookies and mix them with melted butter. Press firmly into a pie pan and refrigerate for 30 minutes.
- For the filling, beat softened cream cheese until fluffy. Whip heavy cream to soft peaks, then add powdered sugar until stiff peaks form. Fold whipped cream into the cream cheese mixture, adding mint extract and green food coloring to taste.
- Spoon the filling into the crust and refrigerate for at least 2 hours until set.
- For the ganache, heat heavy cream until simmering, pour over dark chocolate, let sit for 2 minutes, then stir until smooth. Cool slightly before spreading over the set filling.
- Decorate with whipped cream rosettes and garnish with whole cookies if desired.
