- 1 lb chicken breast or thighs, diced
- 2 tablespoons olive oil
- 1 small onion, diced
- 3 cloves garlic, minced
- 1 teaspoon paprika
- 1 cup uncooked orzo
- 2 to 3 cups chicken broth
- 1/2 cup heavy cream
- 1/4 to 1/2 cup grated Parmesan cheese
- 2 cups spinach
Instructions
- Season the diced chicken with paprika, garlic powder, salt, and pepper.
- Heat olive oil in a large skillet over medium heat. Cook the seasoned chicken until browned and cooked through. Remove and set aside.
- In the same skillet, sauté onion and garlic until softened (about 3-5 minutes).
- Add uncooked orzo and pour in chicken broth. Simmer until orzo is tender (10-12 minutes).
- Stir in heavy cream, Parmesan cheese, and spinach until combined and spinach wilts.
- Return the cooked chicken to the skillet, mix well, and heat through.
