- 1.5 pounds beef chuck, cut into cubes
- 6 cups beef broth

- 3 cloves garlic, minced
- 2 tablespoons vegetable oil
- 1 teaspoon ground coriander
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt, adjust to taste
- 1/2 teaspoon chili flakes, optional
- 1/4 cup fresh parsley, chopped (for serving)
- 1/4 cup fresh cilantro, chopped (for serving)

Instructions
- In a large pot over medium heat, sauté the chopped onion in vegetable oil until translucent.
- Add beef cubes and brown on all sides.
- Stir in minced garlic and spices; cook for 2 minutes.
- Incorporate diced tomatoes and tomato paste; mix well.
- Pour in beef broth and water; bring to boil then simmer for 30 minutes.
- Add uncooked rice; continue simmering until rice is tender (15-20 minutes).
- Adjust seasonings if necessary; serve hot with fresh herbs as garnish.
