Ingredients
- 4 medium sweet potatoes
- 1 pound cooked and shredded beef
- 1 cup barbecue sauce
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1/4 cup chopped green onions
- Salt to taste
- Pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Wash and pierce the sweet potatoes multiple times with a fork, then place them on a lined baking sheet.
- Bake the sweet potatoes for 45-60 minutes until tender.
- While baking, combine the shredded beef with barbecue sauce in a slow cooker on low for 30 minutes or heat in an instant pot for about 10 minutes using the sauté function.
- Once the sweet potatoes are done, fluff their insides with a fork after cutting them open.
- Stuff each potato with the pulled beef mixture and top with cheddar cheese, sour cream, and green onions.
- Serve immediately while hot.
