Instructions
- Cut chicken into bite-sized cubes and season with salt and pepper.
- In a skillet, heat olive oil over medium-high heat. Add seasoned chicken and cook until golden brown (8-10 minutes).
- Warm cooked rice and divide among four bowls.
- Layer each bowl with black beans, corn, and cooked chicken.
- Top with diced tomatoes, sliced avocado, shredded cheese, sour cream, and cilantro.
- Serve with lime wedges for an extra zesty touch.
