Ingredients

  • 1/2 cup rolled oats
  • 2 tablespoons chia seeds
  • 1/2 cup Greek yogurt
  • 1/4 cup coconut cream
  • 2 tablespoons honey
  • 1/2 cup milk (or plant-based alternative)
  • 1 teaspoon vanilla extract
  • 1 cup fresh strawberries, diced

Instructions

  1. In a mixing bowl, combine rolled oats, chia seeds, Greek yogurt, coconut cream, milk, honey, and vanilla extract. Whisk until smooth.
  2. Wash and dice strawberries; fold half into the oat mixture.
  3. Layer the mixture and remaining strawberries in two mason jars or containers.
  4. Cover tightly and refrigerate overnight (or at least 4 hours).
  5. In the morning, stir gently and top with reserved strawberries before serving.
