- 1/2 cup rolled oats
- 2 tablespoons chia seeds
- 1/2 cup Greek yogurt
- 1/4 cup coconut cream
- 2 tablespoons honey
- 1/2 cup milk (or plant-based alternative)
- 1 teaspoon vanilla extract
- 1 cup fresh strawberries, diced
Instructions
- In a mixing bowl, combine rolled oats, chia seeds, Greek yogurt, coconut cream, milk, honey, and vanilla extract. Whisk until smooth.
- Wash and dice strawberries; fold half into the oat mixture.
- Layer the mixture and remaining strawberries in two mason jars or containers.
- Cover tightly and refrigerate overnight (or at least 4 hours).
- In the morning, stir gently and top with reserved strawberries before serving.
