- 1 lb navy beans
- water (for soaking and simmering)
- 1 large onion (diced)
- 1 chicken bone or smoked turkey leg
- 1 cup ketchup
- 1/2 cup brown sugar
- 1/3 cup molasses
- 1 1/2 tbsp mustard
- 2 tbsp apple cider vinegar
- 1 1/2 tsp salt
- 1 tsp freshly ground black pepper
- 1/2 tsp smoked paprika
- 1/2 tsp garlic powder
- 1 bay leaf
Instructions
- Rinse and soak navy beans overnight in cold water.
- Drain beans and return them to a large pot with fresh water, diced onions, and the chicken bone.
- Bring to a boil, then simmer on low heat for about an hour until beans are tender.
- In a separate bowl, mix ketchup, brown sugar, molasses, vinegar, and spices until well combined.
- Remove the chicken bone from the bean pot. Stir in the sauce mixture.
- Preheat oven to 300°F (150°C). Transfer everything to an oven-safe dish and cover tightly.
- Bake for about two hours, stirring occasionally before serving.
