  • water (for soaking and simmering)
  • 1 large onion (diced into 1/2-inch pieces)
  • 1 chicken bone (optional for flavor)
  • 1 cup ketchup
  • 1/2 cup brown sugar
  • 1/3 cup molasses
  • 1 1/2 tbsp mustard
  • 2 tbsp apple cider vinegar
  • 1 1/2 tsp salt
  • 1 tsp freshly ground black pepper
  • 1/2 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1 bay leaf

Instructions

  1. Rinse navy beans thoroughly and soak in water overnight or for at least 8 hours.
  2. Drain the soaked beans and set aside.
  3. In a large pot, heat oil over medium heat; add diced onion and cook until translucent.
  4. If using, add the chicken bone to the pot and sauté briefly.
  5. Add soaked beans into the pot along with enough water to cover them by two inches.
  6. In a separate bowl, combine ketchup, brown sugar, molasses, mustard, apple cider vinegar, salt, black pepper, smoked paprika, garlic powder, and bay leaf. Stir this mixture into the bean pot.
