Ingredients
- 1 lb navy beans
- water (for soaking and simmering)
- 1 large onion (diced into 1/2-inch pieces)
- 1 chicken bone (optional for flavor)
- 1 cup ketchup
- 1/2 cup brown sugar
- 1/3 cup molasses
- 1 1/2 tbsp mustard
- 2 tbsp apple cider vinegar
- 1 1/2 tsp salt
- 1 tsp freshly ground black pepper
- 1/2 tsp smoked paprika
- 1/2 tsp garlic powder
- 1 bay leaf
Instructions
- Rinse navy beans thoroughly and soak in water overnight or for at least 8 hours.
- Drain the soaked beans and set aside.
- In a large pot, heat oil over medium heat; add diced onion and cook until translucent.
- If using, add the chicken bone to the pot and sauté briefly.
- Add soaked beans into the pot along with enough water to cover them by two inches.
- In a separate bowl, combine ketchup, brown sugar, molasses, mustard, apple cider vinegar, salt, black pepper, smoked paprika, garlic powder, and bay leaf. Stir this mixture into the bean pot.
- Bring everything to a boil; then reduce the heat to low and simmer for 2-3 hours until beans are tender.
