Ingredients
- 2 cups kale
- 2 cups broccoli florets
- 2 cups brussels sprouts (chopped)
- 2 cups red cabbage (chopped)
- 1 cup carrots (chopped)
- 1/2 cup fresh parsley
- 1/2 cup almonds (chopped)
- 1 to 2 tablespoons sunflower seeds
- 3 tablespoons olive oil
- 1/2 cup lemon juice (juice of two lemons)
- 1 tablespoon fresh ginger (grated)
- 3 teaspoons Dijon mustard
- 2 teaspoons honey (or maple syrup)
- 1/4 teaspoon salt
Instructions
- Chop kale, broccoli, brussels sprouts, cabbage, carrots, and parsley in a food processor until finely chopped. Transfer to a large mixing bowl.
- Roughly chop almonds in the food processor and add to the bowl along with sunflower seeds.
- In a small bowl, whisk together olive oil, lemon juice, ginger, Dijon mustard, honey, and salt until smooth.
- Pour dressing over the salad mixture and toss well to combine all ingredients.
