  • 2 cups broccoli florets
  • 2 cups brussels sprouts (chopped)
  • 2 cups red cabbage (chopped)
  • 1 cup carrots (chopped)
  • 1/2 cup fresh parsley
  • 1/2 cup almonds (chopped)
  • 1 to 2 tablespoons sunflower seeds
  • 3 tablespoons olive oil
  • 1/2 cup lemon juice (juice of two lemons)
  • 1 tablespoon fresh ginger (grated)
  • 3 teaspoons Dijon mustard
  • 2 teaspoons honey (or maple syrup)
  • 1/4 teaspoon salt

Instructions

  1. Chop kale, broccoli, brussels sprouts, cabbage, carrots, and parsley in a food processor until finely chopped. Transfer to a large mixing bowl.
  2. Roughly chop almonds in the food processor and add to the bowl along with sunflower seeds.
  3. In a small bowl, whisk together olive oil, lemon juice, ginger, Dijon mustard, honey, and salt until smooth.
  4. Pour dressing over the salad mixture and toss well to combine all ingredients.
